If only I got fares from the children for the taxi service I provide them, I'd be one rich lady!
Parents evening tonight, apparently I am the mad mother of a very polite and clever little boy. How did that happen! Well he definitely takes after his Daddy.
Have been busy with my sewing machine tonight. Have been using the crazy patchworking I did last week and turning it into a headscarf for my little lady. Getting there, needs more work though.
Got to share a recipe with the world, probably the first of many. I can guarantee that any recipes that appear are easy to cook, as if they can be cooked by me they can be cooked by anyone, as Domestic Goddess I am not. Everyone I know has been told about this one, and if you ever come to tea, this is what you will eat!
POPEYE SURPRISE
Ingredients
Chicken Breasts (use however many u want, although will need to add more of all other ingredients if doing more than four)
1 Big Bag of Spinach
1 Jar of Red Pesto
1 small tub of low fat crème fraiche
Instructions
Put spinach (all of bag) in bottom of an oven proof dish.
Put chicken breasts on top.
Cover chicken with crème fraiche and jar of pesto.
Put in oven (180 degrees) for one hour (uncovered) – half an hour in stir everything up.
Serve with either pasta or rice.
There you go - nice and easy, but very tasty.
